It’s winter time and if you are bored of having conventional flavours of soup, its good to try a healthier yet new flavour of soup.. “Cream of spinach and corn soup”. A super easy and quick recipe, just right to include spinach in your meal plan !
Ingredients For Cream Of Spinach And Corn Soup
- 200 grams of spinach leaves
- 100 grams onion
- 1.5 tsp ginger garlic paste
- 5-6 cashews
- 1 tsp cumin seeds
- 50-75 grams of sweet corn
- 1.5 cups of vegetable stock or water
- 1.5 tsp of olive oil
- 1/2 tsp red chilly powder
- 1tsp cumin seeds powder
- 1 tsp garam masala
- A pinch-off asafoetida (hing)
- 1 tsp fresh cream
Steps To Prepare Cream Of Spinach And Corn Soup
- Wash and purée the spinach leaves
- Make a fine paste of onion and cashews separately.
- In a pan add some olive oil, add cumin seeds ans allow them to crackle.
- Add a pinch of asafoetida followed by ginger garlic paste, onion paste and salt. Sauté them all until turns aromatic.
- Add the spinach purée to it and mix well. Add all the dry spices now ..red chilly powder, cumin seeds powder and garam masala. Adjust the salt here if needed.
- Add vegetable stock or water and mix all well and allow it to cook on medium to high flame for 5-7 minutes with a closed lid.
- Now add cashew paste and sweet corn. Add some water or vegetable stock if you wish to adjust the soup consistency.
- Open cook it for another 7-8 minutes on medium to slow flame.
- Dress it up with a drizzle of fresh cream and serve hot!
All in all a healthy bowl of yumminess, the crunchiness of sweet corn brings in a lovely texture while you sip in the soup. A perfect recipe to prepare it as a part of your Christmas meal too..the colour goes with the Christmas theme.
